July 31st is National Avocado Day! No…this isn’t ‘national guacamole day,’ this day is devoted to the superfood – a fruit, actually – that makes guac possible. While guacamole is grand, did you know that the avocado is so versatile, it can cover everything from the appetizer to the main dish…and all the way to dessert?

So, here’s a recipe Pam’s Mom has made for her since she was a kid.  It’s fresh, light and delicious:

Take a bed of lettuce — place on it pink grapefruit segments (the kind you get in a jar are good), then chop a half an avocado (more or less to taste) and place it on top of the grapefruit.  Drizzle the salad with Catalina dressing.  YUMMY!

Avocados are more than a staple food in the American diet; they are proven to be a key ingredient in recipes for both inside the body and on the body! According to the Hass Avocado Board, as of 2015, avocado consumption in the United States doubled since 2005 and quadrupled since 2000. In fact, a whopping 4.25-billion avocados were sold in the U.S. in 2015.

But it’s more than “just” food – ancient Aztecs used the avocado to beautify their skin with masks. Then in the early 20th century the cosmetic industry discovered the benefits of its oil in creams, lotions, facial cleansers and other products that required a smooth application. That practice continues today. So matter if you’re looking to fortify your insides…or your outside – avocado could be the way to go!
